Cane Jaggery Cubes

Our cubes begin as whole cane, crushed and strained before the juice ever meets the fire — because jaggery is only ever as good as the juice it started from, and juice cannot be fixed later with additives.

The juice is boiled slowly in an open pan, skimmed by hand, and poured into a tray while it still carries the heat of the fire. Once it has set, it is cut into cubes. No colour, no preservative, no chemical clarifier. What sets is what came out of the cane.

Each cube is portioned to sweeten a single cup, so there is no chopping, no chiselling, and no guessing.
